For the Chicken
½ cuppanko bread crumbs
⅓ cupgrated parmesan cheese
½ teaspoonground mustard powder
1egg
coconut oil

Instructions
Step 1
Combine bread crumbs, cheese, and mustard powder. In a separate bowl, whisk the egg. Cut the chicken into strips or nuggets. Add coconut oil to a pan and heat
Step 2
Dip the chicken in the egg and then the bread crumbs. Add to the pan
Step 3
Bring water to boil and add sea salt. Cook pasta
Step 4
In a large bowl, combine greens and tomatoes
Step 5
Flip the chicken and let it finish cooking
Step 6
Once pasta is done, drain and add to the spinach mixture
Step 7
Add goat cheese and some parmesan cheese to the large bowl. Stir to mix in cheese as it melts and wilt the greens
Step 8
Scoop pasta salad into dishes, add chicken and more parmesan cheese
