Arroz de Tomate (Portuguese Tomato Rice)

This Portuguese style tomato rice is garlicky, comforting and simply delicious. Flavourful, hearty and satisfying - this is what I want to eat when I'm feeling under the weather or on a cold day. Cooks in 30 minutes too - so perfect for weeknights!

Step 1
Slice all tomatoes in half. Finely chop onion and mince garlic. Wash your rice 2-3 times to get rid of extra starch.
Step 2
In a large frypan heat 2-3 tbsp olive oil. Fry onion and garlic til onion is soft, then add tomatoes, tomato paste, paprika and season with salt and pepper. Cook til tomatoes go soft (about 5 minutes).
Step 3
Add the wine and cook for a few minutes until saucy. Add rice, veggie stock, bay leaves then place the lid on and simmer on medium heat for around 20 minutes, stirring occasionally so that the rice doesn't stick.
Step 4
Add a little more water if needed, but your rice should be cooked now., and saucy and shiny. Turn the heat off and stir in the butter til melted. Garnish with fresh coriander and devour!
