CAULIFLOWER SPAGHETTI „CACIO E PEPE“🤌🏼

Ingredients:
800g cauliflower
50g cashews soaked in hot water for about 30 minutes
About 250g (gluten-free) spaghetti
180ml plant milk
Juice of half a lemon
100-200ml pasta water
Preparation:
Preheat oven to 180°C circulating air
Soak cashews with hot water for 30 minutes
Divide cauliflower on a baking sheet into small florets
Season cauliflower with olive oil, salt and pepper. Cut a whole garlic bulb at the top and place it on the tray
Roast for 40 minutes
Half of the roasted cauliflower with the soaked cashews, pfl. Add milk to the blender, season with salt, pepper and lemon
And mix everything into a fine mass
Cook noodles until al dente and mix with the sauce and plenty of freshly ground black pepper, add the rest of the cauliflower on top and enjoy!
