Step 1
" Preheat the oven to 180°C/Gas Mark 4

finely dice the red onion, sweet potato and red pepper, then fry in a drizzle of olive oil for about 5 minutes

Add the garlic and fry for a further minute before adding the smoked paprika and a generous pinch of salt.

Stir through for a few minutes, then take off the heat and set aside
Step 5
For the tofu mix. drain the water from the tofu, add into a food processor with the cornflour and nutritional yeast and blitz until smooth. Add a splash of plant-based milk or water it the texture is a little thick - it should look like smooth houmous.
Step 6
> Place the veggies back on the heat in the trying pan, add the totu mix, stir, then place in the preheated oven
Step 7
bake for about 20 minutes.
