Step 1
Mix the egg yolks, salt, pepper and mustard together until creamy, slowly add the oil bit by bit and mix in, If you add the oil to quickly the mixture will curdle, Keep adding the oil slowly while continuously whisking. Once you are confident the oil has mixed in, you can increase the oil bit by bit while whisking. When you have added all the oil keep mixing until a creamy spreadable mixture forms. Once you are happy this is achieved add the Lemon juice and mix in. You can add other flavourings once completed for example, chopped gherkins or garlic
