Instructions
Step 1
Finely slice the onions, garlic and cut the chicken into bite-size pieces
Step 2
Peel and grate the ginger
Step 3
Cook the onions in a large pan until softend, then add the garlic, ginger and spices. Stir well and cook for a couple of minutes.
Step 4
Add the chicken to the pan ad cook for 5 minutes.
Step 5
Add the tomatoes, stock, apricots and honey and bring to the boil, then turn the heat down.
Step 6
Cover with a lid and cook for about 30 minutes.
Step 7
Stir in the cous cous, simmer for about 6 minutes until tender.
Step 8
To serve, scatter with coriander and flaked almonds and accompany with flatbreads and yoghurt.
