Instructions

Asparagus

Step 1
Peel the asparagus and cut of the ends.
Step 2
Bring a pot of water to a boil. Add the oil, lemon juice and salt. Reduce the heat to medium. Add the asparagus and cook for 15min.

Sauce hollandaise

Step 3
Separate the egg yolk from the egg white and add to a large bowl. Pure in the lemon juice.
Step 4
Bring a pot of water to a boil. Then turn off the heat.
Step 5
Place the bowl onto the pot. Them bottom should not touch the water. Whisk the eggs until they become really creamy.
Step 6
Melt the butter in the microwave but try not to heat it too much, otherwise the eggs will curdle.
Step 7
Remove the bowl from the pot. Pour in the melted butter a little at a time while continuing to whisk the eggs. The consistency should become a lot thicker.
Step 8
Season the sauce with salt and pepper.

Sandwich

Step 9
Heat the oil in the pan. Crack the egg into it and fry for about 2min. Season with salt and pepper.
Step 10
Fry the bacon until crispy and golden brown.
Step 11
Chop the chives, cut the asparagus in half toast the toast slices until golden brown.
Step 12
Spread the bottom toast slice with the sauce hollandaise.
Step 13
Top it with the arugula, asparagus, bacon and fried egg. Sprinkle on the chives.
Step 14
Stack the other toast slice on top and enjoy!
