Instructions
Step 1
Preheat your oven to 350f and make sure all ingredients are room temperature, except for the heavy cream.
Step 2
Cream your butter, sugar, and vanilla until light and fluffy. Add the eggs one by one until well incorporated, followed by the tablespoon of milk.
Step 3
Sift in your flour, baking powder, and salt. Fold until just combined, do not over mix. Divide batter equally between two 6inch baking pans.
Step 4
Bake for 25-30min, or until the top has browned nicely and a skewer inserted comes out clean. Allow the cakes to cool down completely before cutting into layers.
Step 5
To make the syrup, combine the sugar, cocoa powder, and coffee in a pot and place over medium heat. Bring to a boil, and then reduce to simmer for 5 minutes. Take it off the heat and let it come to room temperature.
Step 6
To make the frosting, cream the mascarpone, powdered sugar, and vanilla. Gradually add the cold heavy cream and whip until fluffy and stable. Transfer to a piping bag.
Step 7
To assemble, start with pouring the coffee syrup on the first layer of the cake until it’s evenly coated. Spread a layer of the mascrapone cream, and top with chopped chocolate pieces. Repeat for as many layers as you want to create. Finish with a dusting of cocoa powder, and enjoy!
