Ingredients

1 packageglass noodles
1bell pepper
sliced
0.5onion
sliced
1carrot
sliced
4 cupsspinach
blanched
1 tspsesame seeds
2green onions
sliced
1egg
egg white
yolk
cooked separately
sauce
Instructions
Step 1
mix the sauce ingredients together and set aside
Step 2
in a large pan over medium heat, sauté the bell pepper, carrot, and onion for about 5 minutes
Step 3
blanch the spinach and squeeze the excess water out, set aside
Step 4
cook the glass noodles according to the package directions
Step 5
once the noodles are done cooking, strain and add to a large bowl, cut the noodles a few times so they aren’t so long
Step 6
add the sautéed vegetables, spinach, sauce, sesame seeds, mix everything together with your hands for best results
Step 7
garnish with the egg, green onion, a drizzle of sesame oil and sesame seeds
