Crispy Parmesan Carrot Sticks

If you know someone who doesn't eat their veggies, this recipe will change their mind! I mean, who doesn't love crispy cheese, right! Fair warning, these crispy parmesan carrot sticks are absolutely delicious. I ate more than half just myself!

1 lbcarrots
medium or large sized
2 Tbsolive oil
1 tspgarlic powder
1 tsppaprika
1 tspchili powder
1 tsponion powder
1 tspitalian seasoning
salt
to taste
¼ cupgrated parmesan cheese
¾ cupparmesan
freshly grated

Instructions
Step 1
Preheat oven to 425℉. NO PARCHMENT for your baking sheet here.
Step 2
Slice your carrots into 3 INCH long pieces and then slice those in half lengthwise so there is a flat side to each piece.
Step 3
In a large mixing bowl, add the olive oil, garlic powder, paprika, chili powder, onion powder, Italian seasoning, 1/4 cup grated parmesan, and salt to taste. Toss and coat everything with your carrot pieces.

Step 4
On a large baking sheet, place a small bit of your freshly grated parmesan cheese directly on the tray. Then place your carrot stick, flat side down, directly on top of the cheese. Repeat until the entire try is full.
Step 5
Bake for 20-25 minutes or until tender. Time will vary with the size of your carrot pieces.
Step 6
For the yogurt dip, in a small bowl, whisk together your yogurt, lemon juice, garlic powder, dried mint, salt and milk. Adjust seasonings as needed.
