Great low carb alternative for Taco Tuesday or just because they’re delicious! Omit the rice for more low carb or bulk them up by adding black beans.

Step 1
Cook rice according to package directions
Step 2
Preheat oven to 375°F
Step 3
Cut peppers in half and scoop out seeds. Add to a 9x13 baking dish cut side down. Drizzle olive oil and salt and pepper over the peppers and bake, uncovered, 15-20 minutes until soft
Step 4
Meanwhile cook the ground beef and drain if necessary.
Step 5
Use 3 tbsp taco seasoning and add 2/3 cup water. Bring to a boil and simmer until saucy. Mix in the rice
Step 6
Take out the peppers, turn them over and stuff each one with the beef and rice mixture. Top woth cheddar cheese and bake 5 minutes until the cheese is melted. Top with your favorite taco toppings.
