Instructions

Step 1
Cut chicken thigh meat into 1/4 of inch thick pieces. Marinade chicken with salt, a little bit black pepper to taste and freshly squeezed orange juice. Mix everything until the chicken absorbed all the liquid. Cover it up and Let it sit in the fridge for at least 30 minutes.
Step 2
To make egg batter, mix eggs and cornstarch, stir it continually. The cornstarch might clump up at the beginning. Just keep mixing it and you will get a really smooth, shiny looking batter. Coat marinated chicken pieces with egg batter well.
Step 3
Heat an adequate amount of cooking oil to 360 degrees. If you don’t have a thermometer, you can test it by using a chopstick. If you see it bubbles a lot, it means you are good to go. Fry the chicken for 3-5 minutes or until the surface is getting hard and brown. (It doesn’t need to be golden brown). Remove the chicken and let it rest for 15 minutes before we double fry it.
Step 4
Heat cooking oil to 390 degrees before you add all the chicken pieces back in. Double frying is the key to make sure all your chicken pieces come out crispy. Keep stirring gently until you get a golden brown color. Remove from the heat and set aside.
Step 5
Heat up a bit of cooking oil in a skillet or wok, firstly add in diced ginger and garlic to mix until fragrant on medium low heat. Pour in fresh squeezed orange juice to stir. Further add in light soy sauce, brown sugar, orange zest to stir to melt the sugar. Then add in honey for the honey flavor, this is optional. Pour in white vinegar, this will drop down the temperature of the sauce before you add in the cornstarch water mixture to mix. Quickly add in deep fried chicken pieces to stir until every chicken piece is coated with the sauce, drizzle some white sesame seeds, remove from the heat. Garnish with sliced orange pieces, ready to serve.
