Instructions

Step 1
Preheat oven to 425°F
Step 2
Combine sour cream, lime juice, lime zest, garlic, and salt in a small mixing bowl. Cover the lime crema and refrigerate.
Step 3
Wash and dry potatoes. Cut into evenly sized fries and rinse them under cold water. Pat dry with paper towel.
Step 4
Toss them with Taco seasoning and add them to a baking tray.
Step 5
Drizzle with olive oil, making sure all sides are well coated.
Step 6
Bake for 25 minutes at 425. Toss the fries, reduce the heat to 375, and finish baking for 20 to 25 minutes.
Step 7
Boil a pot of water and cook the chicken for 15 to 20 minutes or until it reaches 165 internally. Shred chicken and set aside.
Step 8
Once fries are cooked, add chicken and cheese.
Step 9
Place back in oven for 2 to 3 minutes until cheese is melted.
Step 10
Add toppings and crema and enjoy!
