Ingredients
8 servings
Meatloaf:
1onion
small, finely diced
8 ozmushrooms
finely diced
2cloves garlic
minced
2 Tbspcoconut oil
1zucchini
small, grated
2 lbsground beef
grass fed
6 ozbeef liver
or liver pate, finely chopped
2eggs
¼ cupalmond flour
or coconut flour or wheat
2 tspsea salt
½ tspblack pepper
1 tspdried oregano
1 tspdried thyme
Topping:
Instructions
Step 1
In a large skillet over medium-high heat, sauté onion, mushrooms, and garlic in coconut oil until lightly browned and all water has evaporated from the skillet. Set aside to cool.
Step 2
In a large mixing bowl, mix meat, cooked vegetables, and all remaining meatloaf ingredients.
Step 3
Form into a loaf shape in a 9x13 inch glass baking dish.
Step 4
Mix topping ingredients. Adjust seasonings according to taste. Spoon over meatloaf.
Step 5
Bake meatloaf in a 350° oven for 45-60 minutes, or until cooked through.
