Step 1
Combine corn starch and flour, season to taste.
Pat chicken fry with paper towel. Cut chicken thighs into 3 pieces. Toss in flour mixture until coated. In a large bowl, beat 2 eggs. Add chicken and mix through until coated. Combine remaining ingredients including taking 1/2 cup of the flour from first coating to add to the cereal mixture. Put in a large resealable bag. Add chicken pieces about 5 at a time and shake to coat. Heat a neutral oil such as vegetable oil in a pan on medium heat, or slightly above depending on your stove, a few mm high. Drop a crumb of coating mixture in and if it sizzles you can add the chicken a few pieces at a time. Do not overcrowd the pan or the oil temperature will drop causing the chicken to be soggy. After a few minutes flip and cook until a meat thermometer reads at leas 165°F. Transfer to a paper towel lined plate.
