Best Ever Chicken Tacos
This chicken taco filling is hearty, versatile, and oh so yummy! Use leftover chicken breast or rotisserie chicken for an easy leftover meal! Just dump all the ingredients in the pan and let it go.
This can be used for tacos, enchiladas, or a casserole, just add rice plop it in a pan cover with cheese and stick it in the oven at 350 degrees until everything is heated through and the cheese is melty!

Step 1
Cook your chicken breast however you would like. I like to roast mine in the oven with olive oil and seasonings for 30 minutes at 375 degrees. After the chicken is cooked I transfer it to the bowl of a stand mixer fitted with a whisk attachment and shred it! Super fast, super easy. Add the chicken to a pan heated to medium heat. Add the corn, black beans, and tomatoes. Stir it all together. Add the two seasoning packets, no need to follow the instructions on the back there is enough liquid in the mix from the canned items. Allow the mixture to heat through and the sauce to thicken. Serve with tortillas and your favorite toppings, or see the description for a few other fun ways this could be used!
