Instructions

Step 1
Cut the cucumber in 2 length ways and then in half moons. Cut the feta into cubes. Cut the red onion in 2 and then cut into very thin moons. Cut the watermelon into small cubes
Step 2
Finely chop the mint and add all of the ingredients together
Step 3
Lightly dress with lemon juice, olive oil and salt and pepper
