Instructions

Step 1
Melt butter in medium sauce pan over medium heat. Add onion; cook and stir for 6 min or until softened. Add flour, nutmeg, and pepper; cook 1 minute. Remove to slow cooker. Stir in broth, broccoli, potato, salt, and bay leaf.

Step 2
Cover; cook on HIGH 3 hours. Remove and discard bay leaf. Add soup in batches to food processor or blender; puree until desired consistency or use an immersion blender. Pour soup back into slow cooker. Stir in 1 1/2 cups cheese and cream until melted. Garnish with additional cheese.
