Step 1
For the relish, heat the oil in a saucepan and sauté the onion so it loses its rawness. You don’t have to cook it through. Add the garlic and cook for another minute, then add all the other relish ingredients – except the lime – and bring to a simmer, stirring a little to help the sugar melt.

2. Cook on a low heat for 20 minutes, or until the mixture is thick. It should still be chunky and brightly coloured, sweet and not too vinegary. Add lime to taste. You might want a little more maple syrup.
