Instructions

Step 1
1. Preheat oven to 200C. Cut pumpkin and zucchini into small 1cm cubes. Finely chop onion. Small pieces will cook more quickly.

2. Add diced vegetables to a large baking dish or tray. Add 1 tablespoon garlic flavoured extra virgin olive oil. Season with salt and pepper.

3. Bake for 30 minutes until the vegetables have softened. Stir occasionally while it's baking.
Step 4
4. Remove dish from the oven and handle carefully as it will be hot. Add 500g store bought gnocchi.
Step 5
5. Stir through 500g pasta sauce and torn basil leaves. Dollop basil pesto over the top.
Step 6
6. Sprinkle with 1 cup/ 100g grated mozzarella cheese and bake for 20-30 minutes until golden and bubbling hot.
Step 7
7. Add extra torn basil as a garnish and serve.
