This is a modification of https://www.thespruceeats.com/easy-halva-candy-recipe-2355437. I liked the texture and wanted to make it the Iraqi way! Try it out! (You should not refrigerate this dessert, it keeps for 3 days to a week depending on your climate, it wont usually last that long!)

Step 1
Mix the sugar and water and bring to a boil quickly. Let it boil for 3-5 minutes and take it off the heat. Mix in the cardamom and cinnamon. Let it cool until you need it again.
Step 2
Melt the butter on medium, you want the butter to bubble but not froth and foam. (Medium to low on some cooktops) Slowly add flour until it is all incorporated, you want it to be like wet sand, clumpy but smooth.
Step 3
Lower the heat a little and keep mixing, do not walk away for the next 15 to 25 minutes. You do not want one side of the flour mixture to darken too fast, as it cooks it will smell nutty and darken. This is a good thing. let it darken a few shades, about 5 minutes after you first smell the nutty scent (or longer if you want to have a more pronounced taste).
Step 4
Add the sugar water to the flour mixture. Using a spatula, carefully squish the mixture so you have no clumps. If you see a layer of oil on top you are doing this right! Do not worry about the oil at the moment.
Step 5
Once you are happy with the consistency, add it to a platter, spread it out and decorate it with a knife or fork. You may add walnuts or any other nuts for garnish. Note that you want the mixture to be hot at this stage, as it cools it will start to set, you wont be able to spread it if it sets.
