Step 1
1. First make sauce; cook garlic in oil on L until fragrant; add remaining ingredients and bring to a boil, then turn heat down and let simmer 10-15m. Remove from heat and let sauce reach room temperature.
Step 2
2. Use about ¾c of the sauce and reserved maple syrup and lemon juice to make a marinade for the chicken, soaking 2-4hrs.
Step 3
3. Brown chicken on both sides, cut into bite-sized pieces and pour remaining sauce over chicken, returning to pan and thickening sauce only if needed. Serve over rice.
