Ingredients

2 tablespoonsolive oil
1.5 poundsboneless skinless chicken breast
1yellow onion
medium, chopped
4stalks celery
chopped
6carrots
medium, peeled and chopped
6 cupschicken broth
1 cupwater
1 ¼ teaspoondry minced garlic
¾ teaspoondried thyme
½ teaspoondried rosemary
½ teaspoondried basil
½ teaspoondried oregano
2bay leaves
1 tablespoondried parsley
1 tablespoonfresh lemon juice
1 ½ cupsnoodles
uncooked, dried or homemade
sea salt
to taste
black pepper
to taste
For Homemade Noodles
Instructions
Stovetop
Step 1
Season the chicken with a little salt and pepper. Heat the oil in a skillet over medium heat.
Step 2
Add the chicken and, flipping occasionally, cook until the chicken is tender and the internal temperature is at least 165°F.
Step 3
If you're using homemade hoodles, then while the chicken is cooking prepare the noodles (see the instructions below).
Step 4
When the chicken is fully cooked, remove it from the heat and shred it with two forks. Set aside.
Step 5
If desired, sauté the onions, carrots, and celery in a little oil, just until the onions become fragrant. Remove from heat. Set aside.
Step 6
In a large stockpot add the broth, water, onion, celery, carrots, chicken, garlic, and all of the seasonings except for the parsley. Heat over high heat until boiling.
Step 7
Add the noodles and parsley and return to boiling. Then reduce heat and simmer 10 to 20 minutes until noodles are cooked through. Taste, and adjust seasonings as desired.
To Prepare the Noodles

Add the egg, milk, and salt to a bowl and mix with a fork.
Step 9
Add half of the flour and mix. Add more flour, a little at a time, just until the dough forms a lump.
Step 10
Dump the dough lump onto a floured surface and knead, adding more flour as needed, just until the dough is no longer sticky. Be careful not to over knead or the dough will become tough.
Step 11
Roll out the dough with a rolling pin until very thin. Flip and dust with more flour as needed to prevent sticking.
Step 12
Use a pizza cutter to cut dough into strips. Then, if desired, cut into short pieces.
Crockpor or Slow Cooker
Step 13
In a slow Cooker, add the chicken, onion, carrots, celery, garlic, broth, water, and all of the seasonings except the parsley. Season with salt and pepper.
Step 14
Cover and cook on low heat for 6-7 hours.
Step 15
Remove the chicken and set it aside to cool for 10 minutes, then dice or shred into bite-sized pieces.
Step 16
Add the noodles and parsley to the slow Cooker. Increase the temperature to high. Cover and cook until the noodles are cooked through, about 10 to 20 minutes. Stir in lemon juice and chicken.
Step 17
Separate into 4 equal servings. Serve and enjoy!
