Spaghetti frittata

Crispy cheesy delicious way to use up leftover spaghetti. Add some chopped ham if you want or whatever you have. This is pretty tricky imo to get out of the pan and I recommend a nonstick pan AND greasing it. Even if it falls apart it tastes great so don’t worry.

Instructions

Step 1
Heat oil in a medium pan to medium- medium high heat. Mix ingredients in a bowl, pour into hot pan and flatten to an even layer. Cook a few minutes to crisp then reduce heat to medium low and cover pan. Cook for approx 15 minutes until nearly set. Loosen the frittata with a spatula. Using a plate to cover the pan, flip the frittata onto the pan. Spray the pan with nonstick cooking spray and slide the frittata back into the pan to crips up for a few minutes. Flip it back in to the plate and allow to cool so it properly sets (I refrigerated) before cutting into wedges.
