Instructions
Step 1
Fill medium pot with water about 2/3 full - set to high to boil. Add a bit of salt to water.
Step 2
While water is getting ready to boil - brown meat, onion and garlic in separate pan.
Step 3
In a separate bowl - mix together all of the ricotta, 1/2 the bag of mozzarella, a handful of Parmesan cheese, 1 egg, salt and pepper.
Step 4
Once water is boiling add lasagna noodles and cook until done - 10-12 minutes
Step 5
Once meat is browned - drain off fat in colander, then return to pan and add entire jar of marinara sauce. Cook on low for 10 minutes to combine flavors.
Step 6
Once noodles are cooked, drain water. Lay out noodles on aluminum foil to cool.
Step 7
Use 9x13 pan to bake - add a layer of meat sauce to bottom of pan.
Step 8
Once noodles are cooled - add a layer of ricotta mixture, then a layer of meat sauce. Roll up each noodle into a roll and then place in baking dish
Step 9
Continue until all noodles are made into rolls. Add leftover meat sauce to top to cover. Cover baking dish with aluminum foil. Bake roll ups on 375 for 20 minutes. Enjoy!
