Instructions

Step 1
Combine beef, eggs, garlic, parsley, celery leaves, breadcrumbs, parmesan, salt, and pepper into a large mixing bowl.
Step 2
Mix together with your hands and roll into balls (about the size of your palm). This should produce 12-14 meatballs.
Step 3
Heat olive oil in a cast iron skillet set to medium-high. Brown the meatballs on the cast iron.
Step 4
Once browned, place in the oven set to 350° for 15-20 minutes. The internal temperature should be 165°.
