Step 1
Preheat oven to 350°F. Lightly grease an 8 x 8-inch glass baking dish with butter and set aside.
Step 2
In a large bowl, combine oats, walnuts, cinnamon, ginger and salt. Mix in apples, yogurt, milk, eggs, maple syrup and vanilla. Stir in butter until all ingredients are well combined.
Step 3
Spread mixture into baking dish and bake 20-30 minutes, or until golden brown and oatmeal is set. Cool in baking dish at least 5 minutes before serving.
Step 4
Cut into 4 equal servings.
