Instructions
Step 1
1. Preheat oven to 400 degrees
Step 2
2. Slice each chicken breast in half to make 8 medallions. Pound each medallion lightly with a meat mallet until they are evenly thickened throughout.
Step 3
3. In a small bowl, beef, egg, and milk.
Step 4
4. Dredge chicken medallion in flour, then in egg milk mixture, then breadcrumbs.
Step 5
5. In a large, sauté pan, sauté chicken medallions in olive oil over medium high heat for 3 to 5 minutes on each side or until cooked through.
Step 6
6. Transfer cooked chicken medallions to a baking dish. Top with marinara sauce and sprinkle cheese is over top.
Step 7
7. Place in oven and cook for a few minutes until cheese is melted and bubbly.
