Instructions
Step 1
Measure tap water into a jug and then add to a large saucepan, Add the stock cubes and put on the highest heat. Wait for it to boil.
Step 2
Whilst waiting, prepare your vegetable and chicken. On a white chopping board, peel and grate the ginger and garlic, slice the mushrooms and spring onions.
Step 3
On a red chopping board, chop the chicken into small bitesize pieces.
Step 4
Add everything to the pan. Bring it back to the boil, then reduce the heat to a medium low temperature and simmer for 1mins, until the chicken is tender and white in the middle
Step 5
Add the noodles sweetcorn, and the soy sauce. Simmer for 3-4 mins until the noodles are tender.
Step 6
Ladle into two bowls and scatter over the any spring onions you have left, herbs and chili shreds if using. Serve with extra soy sauce for sprinkling.
