Instructions
Step 1
Cook the chicken in the butter in a heavy-based fry pan until cooked through.
Step 2
Remove from the pan and set aside. Add the stock to the pan to deglaze it - bring to a simmer and add the mushrooms and courgette- cook for 5 minutes or so until cooked through and tender.
Step 3
Turn the heat to low, add the cream, lemon zest and parsley - stir through before adding the chicken back in to reheat briefly.
Step 4
Serve with a squeeze of lemon.
