Khachapuri Cheese Bread

Instructions

Step 1
Combine yeast, warm water and sprinkle of sugar. Cover and let rise for 10 min.
Step 2
Combine dough ingredients in mixer: warm milk, 1 Tb sugar, 8 Tb butter, salt and flour. Place dough in greased bowl, cover and let rise for 1.5 hrs.
Step 3
For filling, grate blocks of cheese and place in large bowl. Add in 2 Tablespoons of melted butter, coriander, eggs, and red onion (or scallion).
Step 4
When dough ready, divide into two balls. Roll out and place in two separate pie dishes. With fork, make small holes in bottom of crust. Divide filling between them.
Step 5
Once filling added, fold dough towards center like a flower (5-6 folds), being sure not to leave cracks or openings for cheese to leak out. Do this to both cheese breads. Brush top with egg whites and sprinkle with poppy seeds. Bake at 400 F for 15 minutes, then lower to 350 F and continue to bake until golden.
