SUPER HEALTHY SPINACH PASTA

Instructions
Step 1

Preheat oven to 360F.

Step 2

Chop your zucchini, broccoli, chard and pepper.






Step 3

In an oven dish, add your feta, zucchini, broccoli, chard and pepper, season with salt, pepper and a drizzle of extra virgin olive oil, cover with aluminium foil and bake for 25 mins (180C/360F).











Step 4

Remove the foil and cook for another 5 mins.

Step 5

In a food processor, add flour and fresh spinach. Mix for a minute or two or until you form a dough.



Step 6

Remove the dough and use your hands to form a ball then flatten it to a disc (1 ½ inches thick).
Step 7

Add 2 cups boiling water to your pot and add salt.



Step 8

Hold the disc on top of your boiling water and use some kitchen scissors to cut 1 ½-inch-pieces of dough, letting them fall into the boiling water.


Step 9

Cook your fresh pasta for about 5 mins, or until they float to the surface. Drain.


Step 10

Add your baked feta and green veggies in a food processor and mix everything until creamy, adding a drop of extra virgin olive oil if necessary.







Step 11

Pour your sauce in a pan over medium low heat, add your boiled pasta and toss well over the heat to combine all the flavours together, adding some pasta water if necessary.



Step 12

Turn the heat off, add your grated Parmigiano and stir one last time. Buon appetito!
