30 mlssoy sauce

5 mlshoney

10 mlsextra virgin olive oil

5 gmsginger
minced

1clove of garlic
minced

250 gmschicken breast
diced

10 gmsreduced fat mayonnaise

15 gmssriracha

½ tspgarlic powder

1carrot
shredded or thinly sliced lengthways

1lebanese cucumber
sliced and then halved

50 gmsbaby spinach

0.25avocado
diced

5 gmscoriander
roughly chopped
Instructions
Step 1
Cook rice as per packet instructions.
Step 2
In a small bowl, combine the soy sauce, honey, olive oil, ginger, and garlic. Add chicken to the bowl and mix well.
Step 3
Heat a sauce pan and cook the chicken for 5 -10 minutes.
Step 4
In a small bowl, add the mayonnaise, sriracha sauce, and garlic powder, and whisk to combine.
Step 5
Serve chicken with rice, carrots, cucumbers, spinach, and avocado and drizzle sauce. Top with chopped coriander. Divide into two serves and store leftovers in the fridge for tomorrow's dinner.
