Instructions

Step 1
Roughly chop the ingredients for the tomato pepper paste, add them all to a blender and blend until smooth. Transfer the sauce to a pot and reduce it for 10 minutes on medium heat until it starts to thicken.
Step 2
Chop one onion finely and add it to a pot on medium heat with the peanut oil. With a spice grinder or a mortar and pestle (or simply with a blender) blend together the garlic, ginger and the spices. To the pot with the oil and onion, add the bay leaves, tomato paste and 1tbsp of the spice mix
Step 3
Let everything get to know each other for a couple of minutes and add the tomato pepper sauce and the bouillon cube, crushed by hand. Let cook for 10 minutes on medium-low
Step 4
Wash the rice and add it to the pot. Mix it well and add enough water just to cover the rice. Cover the pot with a towel and the lid, turn the heat to low and cook for 25 minutes
Step 5
Add an optional knob of butter and some freshly sliced tomato and red onion and serve!
