Instructions
Step 1
In a large sauté pan heat 2 tablespoons oil over medium heat and sauté the onions translucent, about 5 to 8 minutes.

Add couscous and stir to coat

Toast the couscous for 1-2 minutes stirring often

Season with onion soup mix and soy sauce and mix well.

Add water and bring to a simmer

Reduce heat to low and cook for 15 minutes, covered

Meanwhile, in a medium frying pan, heat 1 tablespoon of oil.

Add salami cubes and sauté, stirring, until salami gets slightly crisp making sure not to overcook.

Add the crispy salami to cooked couscous and mix well to combine.

VARIATIONS To make a gluten-free variation of this recipe, try it as Salami Rice: Sauté onions and salami, season with 2 ublespoons onion soup mix and 1 tablespoon soy sauce. Add to cooked rice and mix well. This recipe can also be made with orzo instead of couscous. For another variation, to make Couscous with Chickpeas: Add 1 drained and rinsed can of chickpeas to the pan when you add the couscous and continue with same method, omitting the salami.
