Instructions

Step 1
Sauté onions and peppers until they begin to soften, add mushrooms and cook down. Season with salt and pepper. Take off heat when done.

While sautéing veggies, boil water and cook chicken. When done, shred chicken and add to veggies.
Step 3
Mix in cream cheese, 1 cup shredded cheese and red salsa.
Step 4
Pour enchilada sauce into baking pan. Dip tortilla in sauce, coat both sides. Spoon in filling and roll. Sprinkle top with remaining cheese.
Step 5
Bake until cheese bubbles, transfer to broiler on high until cheese is golden and crispy.
