Pork Tenderloin Sandwich

You know how you experiment in the kitchen, and sometimes it goes terribly wrong (happened last week!), AND SOMETIMES IT GOES SO WELL YOU AMAZE YOURSELF?!? That was tonight. We had a leftover pork tenderloin from last night, and I was trying to decide what to do with leftovers to make them exciting. And I nailed it.

Instructions

Step 1
Sourdough, lightly pan-toasted in olive oil.
Step 2
Combine grainy Dijon/honey and spread mixture on bottom slice.
Step 3
Layer of Arugula, tossed in a drizzle of olive oil, lemon zest, and kosher salt.
Step 4
Layer of thinly sliced pork tenderloin.
Step 5
Combine balsamic, pepper & mayo and drizzle over contents.
Step 6
Finished with crunchy caramelized shallots, and the top slice of pan toasted sourdough.
