Step 1
Chop and toast walnuts in skillet. In a bowl, combine toasted walnuts, oats, cranberries, chocolate chips, maple syrup, peanut butter and vanilla. Mix. Add half of mixture into food processor and pulse until well mixed. If still crumbly, add a little water (1 tablespoon at a time). Set aside mixture and do remaining half in food processor.
Step 2
When finished, pour and press all of protein bar mixture into 9x13 baking dish. Bake at 375 F for approx. 20 minutes or until light brown. Refrigerate and cut into 2 by 4 inch bars.
