Prep
Step 1
Preheat oven to 450 degrees F.
Step 2
Chop parsley and oregano leaves
Step 3
On a plate, combine panko and 4 tsp of the oregano.
Step 4
In a bowl, combine honey (2 tbsp) and half of the mustard (2 tbsp).
Step 5
Pat pork tenderloin with dry paper towel and season with pepper and salt.
Step 6
Brush honey mustard mixture all over the pork, then press gentry into the panko mixture.
Sear and Bake Pork

Heat a large pan over medium-high heat. Add drizzle of oil, then the pork. Seat until golden-brown all over, 2-3 min per side.

Transfer the pork to a baking sheet in the oven. Cook for until internal temp is at least 145 degrees F, 14-18 min
Make Sauce
Step 9
Wipe the pan clean. Add butter (2 tbsp), swirl the pan until melted, 1-2 min.
Step 10
Add the broth concentrate, water (1 cup of water), remaining oregano, and remaining mustard (2 tbsp). Stir together until the sauce reduces slightly. Add half the parsley and stir.
Serve
Step 11
Slice the pork, pour sauce over pork, and sprinkle remaining parsley.
