Ingredients

1 x 3 poundbeef roast chuck
round

2 teaspoonssalt

1 teaspoonblack pepper

2 teaspoonsgarlic powder

2 tablespoonsvegetable oil

6 clovesgarlic
minced

2 cupslow sodium beef broth

2white onions
large, cut into 2 inch chunks

4carrots

1 poundbaby potatoes

1 sprigfresh rosemary

2 sprigsthyme

¼ cupflour

1 cupBeef broth
or water
Instructions
Step 1
Preheat oven to 350 degrees.

Step 2
Season both sides of chuck roast with salt, pepper and garlic powder. Add vegetable oil to cast iron skillet and sear roast until browned, about 3 to 4 minutes each side.

Step 3
Remove roast from pan and place into a roaster or Dutch oven briefly on a plate or cutting board. Add carrots, onions, shallot, garlic and potatoes around the roast. Season the veggies with salt, pepper and garlic powder. Add roast back to the pot. Pour beef broth around the roast.


Step 4
Place rosemary sprig and thyme on top.
Step 5
Place a lid on the pan and transfer it to the preheated 350 degree oven. Cook 3 hours or until meat shreds easily with a fork.


Step 6
In cast iron skillet, add flour and cook until the flour has browned. Add water or beef broth to make a gravy.

Step 7
Serve with mashed potatoes, cabbage and cornbread.
