A Filipino friend made this recipe on New Year’s Eve one time. It was so yummy! She ended up teaching me how to make them.

Instructions
Step 1
In food processor, grind carrots until fine. Grind onions as well. Set aside in two bowls. Cut chicken into cubes and place in food processor. Grind.
Step 2
Place oil in skillet and cook ground chicken until browned.
Step 3
Pour soy sauce into chicken little by little, being careful not to add too much (taste as you go). Add sugar.
Step 4
Mix in ground carrots and onions. Let simmer until softened. Turn head off. Drain excess fluid from meat. Place in large bowl and add cheese. Stir and allow to melt.
Step 5
To make lumpia rolls, lay square wrapper like a diamond. Put a spoonful of meat at the bottom and wrap upwards, folding sides in. Repeat.
Step 6
Cook lumpia in a skillet with oil when ready to eat. You can also freeze them in batches. To freeze, do not cook lumpia shells. Individually wrap lumpia in plastic wrap and then put 6-8 together and wrap with foil tightly prior to placing in freezer. When ready to eat, allow to thaw and cook in skillet with oil.
