Ingredients

300gall purpose flour
11-13% protein
125gwater
lukewarm
3gActive dry yeast
45gvegan butter
softened
100gpotato
mashed
2 Tbspsugar
5gsalt

Instructions
Step 1
Peel, chop and cook the potatoes. Mash with a fork and set aside to cool. You can also use leftover mashed potatoes!
Step 2
Mix all ingredients in a bowl.
Step 3
Knead very well for 8-10 minutes until you have a smooth and elastic dough.
Step 4
Cover and let it rest for about 90 minutes until risen by about 50-90% in size.
Step 5
Deflate the dough, cut into 6 pieces and shape each piece into a tight ball. Cover and let them rest for 45-60 minutes.
Step 6
Brush the buns with some softened vegan butter and maple syrup.
Step 7
Bake in the preheated oven at 210°C for 15-20 minutes until deep golden brown.
