Instructions
Step 1
Cut the cucumbers into 1/2 inch rounds. Place in a bowl, and sprinkle with the salt. Massage the salt into the cucumbers and let sit for about 20 minutes.
Step 2
Mince and shallot, and add to a bowl. In the same bowl, add the curry powder, fish sauce, calamansi juice, and oil. Mix well to form a dressing. Taste to adjust seasoning.
Step 3
After the 20 minutes, wash off the salt off of the cucumbers. Drain well and remove any excess water. Place the cucumbers in the dressing and toss until it is fully coated.
Step 4
Best served cold and right away.
