Mac 'n cheese with a kick from salsa

Ingredients
4 servings
1 ½ cmilk
2 Tcorn starch
1 tsalt
½ tdry mustard
¼ tpepper
2 tbutter
2 cshredded cheddar
divided
8 ozReady Cut
or other ziti type pasta
2 ½ cdrained
1 csalsa
Instructions
Step 1
1. Cook ziti or elbows per package directions.
In 3 quart sauce pan combine milk, corn starch, salt, mustard and pepper. Add margarine. Stirring constantly, bring to a boil over medium heat: boil one minute. Remove from heat.
Step 2
2. Reserve 1/4 cup cheese for topping. Stir in remaining cheese into sauce until smooth; stir in Ready Cut and salsa. Turn into 2 quart casserole; sprinkle with reserved cheese.
Step 3
3. Bake in 375° oven for 25 minutes or until hot and bubbly.
