Instructions
Step 1
Begin with crushing the peppercorns in a pestle & mortar or simply using a pepper grinder.
Step 2
Crack one full egg into a mixing bowl and add 2 egg yolks. Grate in the pecorino and add the pepper. Mix into a paste and leave to the side.
Step 3
Get a pan of salted water onto boil and add the pasta. Cook to al dente following package instructions.
Step 4
Add the guanciale/pancetta to hot frying pan and cook until crispy.
Step 5
Then turn the heat off, add the pasta along with the egg/cheese paste and a half cup of pasta water. Mix well.
Step 6
Serve hot and enjoy!
