Pulled Pork for Cubano Sandwich

The essential ingredient of the Cubano sandwich (see my recipe) is roasted and pulled pork. Traditionally, a bone-in pork shoulder or butt is marinated in mojo — a marinade made with key lime juice (if not available, substitute with a mix of orange and lime juice), garlic, Mexican (! not Mediterranian) oregano, and cumin. Choose the best quality pork for this recipe.

Step 1
Place pork in a large container. Season it generously with salt.
Step 2
Combine ground spices, oregano, minced garlic, and juice(s) in a bowl. Add the marinade to the pork. Make sure it is submerged. Cover and place in a refrigerator for 8 hours.
Step 3
Preheat oven to 250F. Remove the pork from the marinade, wrap it in foil, and roast for 8 hours. OPTIONAL: Reduce the marinade over medium heat until it is syrupy, and add it to the pulled pork for more flavor. Adjust to your taste.
Step 4
Use your hands or a fork to pull pork. Keep refrigerated in a closed container until ready to use for Cubano Sandwich or any other sandwiches.
