Instructions

Step 1
Preheat oven to 350°F.
Step 2
Sauté onions, peppers, and garlic. Add spinach and cook until wilted. Set aside. Brown sausage.

Step 3
Whisk eggs, salt, and pepper. Add meat and veggie mixture. Mix well and pour into muffin tin (well-greased if using tin, lightly greased if using Sil-Pat).
