Ingredients
2 servings
1 ⅓ cupwhole almonds
blend to almond flour, for SPREAD 2 CUPS
⅓ cuplemon juice
increase for SPREAD for taste
¼ cupolive oil
10ggarlic cloves

1 ¼ tspsalt
⅓ cupwater
for spread, up to 2/3 cup for baked
¾ tspsodium lactate
Herb Oil for Baked Feta
Instructions
Step 1
Blend the almonds into almond flour.
Step 2
Put everything, except the Herb Oil Ingredients, into a high-speed blender or food processor and blend until smooth.
Add sodium lactate

Put into a round container or similar.
Step 4
Leave in the fridge for a couple of hours to firm up if required.
Step 5
Serve with slices of toast and drizzle with maple syrup

FOR BAKING:
Step 7
Complete above steps but do not place in the fridge

Put into greased cheese molds and create a swirl so the olive oil can run into the seams. Drizzle with olive oil and bake for 7 mins. TERRIES OVEN
Step 9
Remove from the oven and drizzle with more olive oil and rosemary or thyme. Bake for a further 5 mins. Remove when slightly brown on top. Browning of the outer layer is necessary.
Step 10
AIR FRYER: CAKE 180c 7 mins then add Rosemary for 5 more mins. May need to cover with foil to avoid burning. Bake longer for a more crumblier feta

Step 12
The water content will depend on how thick you want the spread to be. 1/3 cup is enough but it will be thicker BEST FOR BAKE FETA. For SPREAD it should be 2/3 but add 1/3 cup at a time.
Step 13
If using sunflower oil reduce to 1/4 cup water and add more to get desired consistency for baking
