Ingredients

15 ozcan chickpeas
drained and rinsed
1 Tbspolive oil
plus more for topping
1 Tbspza'atar
plus more for topping
¼ tspgarlic powder
salt
to taste
pepper
to taste
½ cupvegan cream cheese
softened
¼ cupvegan Greek yogurt
0.5juice from lemon
¾ cupfresh spinach
chopped
⅛ cupshallot
chopped
¼ cupvegan feta cheese
crumbled
¼ cupKalamata olives
sliced and pitted
1 Tbspfresh mint
sliced
Instructions
Step 1
In a medium mixing bowl combine chickpeas, olive oil, za'atar, garlic powder, salt, and pepper and mash until smooth.
Step 2
Spread chickpea mixture in an even layer into a 9-inch pie dish.
Step 3
In a small mixing bowl combine cream cheese, Greek yogurt, lemon juice, and salt and pepper to taste.
Step 4
Spread the yogurt mixture over the chickpea layer.
Step 5
Top the dip with a sprinkle of spinach, shallot, vegan feta, olives, and mint leaves.
Step 6
Drizzle with additional olive oil, za’atar, and salt and pepper if desired.
Step 7
Serve with pita chips, crackers, and fresh veggies.
