Chickpea Salad

Instructions

Step 1
Preheat oven to 350*F. Bake almonds for 4-5 minutes or until browned.
Step 2
Pour both cans of chickpeas (and liquid) into medium saucepan. Simmer over medium heat for 10 minutes, then pour chickpeas into colander and drain well.
Step 3
Transfer drained chickpeas to large bowl. Using potato masher or forks mash chickpeas unitl desired consistency is achieved. (I like when it is a little chunky)
Step 4
Add celery, onion, parsley, mayo, salt, almonds to mashed chickpeas. Stir well to incorporate
Step 5
Mix in grapes.
